The only thing he hasn’t found out yet is how to avoid completely messing up the first pancake. Tips and tricks are therefore always welcome, so share them below and we will pass them on to him!
By the way, Willem will report on his “Pancake Adventures” at the Berlin Travel Festival 2020. If you don’t want to wait until March, you can watch the videos of his different stops, browse through his book or just enjoy some of his pancakes.
Willems grandma’s “super-secret recipe” is as follows:
Yields: 25 pancakes
1kg of flour
1l. of milk
1l. of water
melted butter (optional)
250 gram butter
First heat the pan on a high fire.
Add butter, swerve the butter through the pan. Take the pan off the stove when adding butter, otherwise the butter will burn.
At a scoop of batter and swerve it through the pan, so all the batter is divided evenly.
When the pancake is too thick you can try to use the outer edges of the pan.
When the top side is solid, you can flip it. Then wait 30 seconds and flip it again.
After a couple of pancakes, the pan can become too hot, so lower the fire or let the pan cool down a minute.
